Cheddar and Bacon Quiche

Quiche, originating from the medieval German kingdom of Lothringen (now Lorraine, France), traditionally featured a filling of eggs, cream, and lard. Its evolution in French cuisine transformed it into a versatile dish, welcoming various fillings like cheese, meats, and vegetables. With its rich, savory custard and flaky crust, quiche stands as a timeless comfort food, suitable for breakfast, lunch, or dinner, warming both body and soul.

  • 1 prepared pie crust (store-bought or homemade)
  • 6 large eggs
  • 1 cup heavy cream or whole milk
  • 1 cup sharp cheddar cheese, grated
  • 6 strips of bacon, cooked crisp and crumbled
  • 1/2 cup onion, finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional)
  • 1 tbsp fresh parsley or chives (optional, for garnish)

Directions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Pie Crust: If not using a pre-baked crust, roll out your pie dough and fit it into a 9-inch pie dish. Prick the bottom with a fork. Pre-bake the crust for about 10 minutes, until it’s just beginning to set but not brown.
  3. Mix Filling: In a large mixing bowl, whisk together the eggs, heavy cream or milk, salt, pepper, and paprika until well combined.
  4. Add Ingredients to Pie Crust: Sprinkle half of the grated cheddar cheese at the bottom of the pre-baked pie crust. Evenly distribute the crumbled bacon and chopped onions over the cheese.
  5. Pour Egg Mixture: Pour the egg and cream mixture over the bacon and onions in the pie crust.
  6. Top with Remaining Cheese: Sprinkle the remaining cheddar cheese on top.
  7. Bake: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the center is set and the top is golden brown. If the edges of the crust start to brown too quickly, you can cover them with aluminum foil or a pie shield.
  8. Cool & Serve: Remove the quiche from the oven and allow it to cool for 10-15 minutes before slicing. Garnish with fresh parsley or chives if desired.
