- 2 lbs ground beef or turkey
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 bell pepper (red or green), chopped
- 2 (14.5 oz) cans diced tomatoes (with juices)
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained and rinsed
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to your heat preference)
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 cups beef or chicken broth
- 1 cup shredded cheddar cheese (for topping, optional)
- Sour cream (for topping, optional)
- Fresh cilantro (for topping, optional)
Directions
- Brown the Meat: In a large pot over medium heat, brown the ground meat. Once browned, remove excess fat.
- Sauté Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Cook until the onion becomes translucent.
- Add Spices: Stir in the chili powder, cumin, paprika, cayenne pepper, dried oregano, salt, and pepper. Cook for about 2 minutes to let the flavors meld.
- Beans and Tomatoes: Add the diced tomatoes (with their juice), corn, kidney beans, and black beans to the pot. Mix everything well.
- Pour in Broth: Add the beef or chicken broth to the pot, ensuring that it covers the meat and vegetables. If it doesn’t, add a little water or more broth.
- Simmer: Reduce the heat to low and let the chili simmer uncovered for about 20 minutes. Stir occasionally. If the chili becomes too thick, you can add a bit more broth or water.
- Taste and Adjust: After simmering, taste the chili. Adjust the seasonings if necessary.
- Serve: Ladle the chili into bowls. If desired, top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
